2 medium potatoes (about 300g)
1 medium carrot (about 100g)
1 small onion (about 80g)
1 small bunch of parsley (about 2 tablespoons, finely chopped)

3 tablespoons breadcrumbs (about 30g)
100g mozzarella cheese (about 1 cup, shredded or cubed)

Directions
- Prepare the vegetables
Grate the zucchinis, sprinkle with salt, and let sit for 10 minutes to release excess water. Squeeze well.
Grate the potatoes and carrot.
